His plaudits are considerable, also being a former Welsh National Culinary Team member representing Wales globally, including in six Culinary World Cups and six Culinary Olympics. Danny’s also a former Senior Welsh Culinary Team Captain and former Junior Culinary Team Coach as well as a Global Chef Challenge fi nalist. Danny is the Chef Director and owner of Olive Tree Catering.


Gareth Johns the Slow Food Ambassador Chef for Wales, who has drawn on 40 years of experience all over the world to promote the cause of Good, Clean and Fair Food will also be demonstrating his skills on both days of the weekend. 2025 marks Gareth’s 25th year at The Wynnstay, Machynlleth. Gareth is a fervent educator and a regular at food fairs, festivals and seminars. He believes strongly that ‘knowledge not shared is wasted’.


Cambrian Training Company (CTC), the leading Welsh provider of work-based- learning apprenticeships in culinary arts, hospitality and food and drink, is also supporting the live kitchen theatre.


CTC culinary arts training offi cer, Andrew Addis-Fuller will be demonstrating his pastry skills on Saturday 5th and Sunday 6th October. Andrew has been a chef working in the industry for over 30 years and in this time, he has had the privilege to work alongside and learn from some very talented people.

Andrew was a pastry chef at Langoed Hall when they gained their fi rst Michelin star and he has spent time in the kitchen of the 3 Michelin star chef Michel Bras at his restaurant in Laguiole, France.


Andrew has also represented his native Wales in international culinary competitions at home and in France. As a CTC training offi cer, Andrew now passes on his skills to the next generation of chefs and is a mentor to young chefs for competition cooking.


Wales is world-renowned for its top-quality Welsh meat, reared low intensively on the country’s lush green pastures. Wales is also one of the most sustainable places on Earth to produce red meat, with its farmlands, trees and hedgerows acting as carbon stores.


CTC training offi cer Craig Holly, a former Welsh Butcher of the Year and past member of the Craft Butchery Team Wales, will be showcasing his butchery skills over the weekend.

His demonstrations will show the diff erent cuts of red meat and wide range of menu options using Welsh GI red meat, as well as explaining its health benefi ts as part of a balanced diet.

As well as the chef and butchery demonstrations there will be Welsh arts and crafts stalls and lots of family fun attractions for visitors to enjoy at the Mid Wales Autumn Fayre, taking place on Saturday 5th and Sunday 6th October at the Royal Welsh Showground.


New for 2024, visitors can enjoy a wide range of street food, bar and live music on Saturday night featuring headline band, New Rivals, from Builth Wells.


There’s free car parking and well-behaved dogs on leads are welcome.
